I believe I jumped the gun on reporting this here. There are two factors, It
would appear it's a MythTv configuration issue setting the resolution to
480x480 4:3 regardless of the recording profile values. Also, the channels I
was recording from were all HD, but they were completely square letter boxed
feeds which gave the appearance of a tiny 480x480 recording.
